So, it’s only been six months since I wrote an entry on this goal or even posted to 43things, but I found out about zucchini noodles, and I just had to share.
Basically, you peel fettuccine-like ribbons off a zucchini with an ordinary vegetable peeler. You can cook briefly for a few minutes, but it’s also good raw, with a sprinkling of Parmesan cheese and fresh cracked pepper. It’s also faster to prepare than actual pasta.
There’s something a little wrong about my last entry also being about how fruits can be transformed into something unlike a fruit, but hey, whatever gets you to the table, right?

I used to make zucchini noodles a lot. They work wonderfully in a lasagna, too.
